The Whole Grain Steel-Cut Oatmeal Cookies recipe from Food.com is very fiber heavy, thanks to the steel-cut oats, which is a plus for me. I rolled the batter into balls onto the baking sheet, and they never quite flattened out after baking. As a result, there was a crisp shell over a puffy interior with crunchy bits of oats embedded in it.
I did not have the pecans and dried cranberries the recipe requested, but with the second batch of cookies, we added in mashed banana. My significant other loved the subtle banana flavour and added chewiness, but wished that the oats were less prevalent. I, on the other hand, preferred the crunchiness of the non-banana version.
