Tasty Tuesday: Bacon and beets sandwich

Bacon and beets sandwich from Rashers: smoked strip bacon with homemade pickled beets, goat cheese, spinach and creamy mustard vinaigrette. The beets were fresh and sweet, which complemented the dense and flavourful bacon perfectly. The texture featured a delicious mix of crunchy and soft with the bread crust and bacon in the former camp and the beets and cheese in the latter. Long after I had finished lunch, I could not help exclaiming, “That was a good sandwich.”
