Admittedly, I got squeamish when I was offered BBQ frog legs, both with and without the skin, at a Ho Chi Minh City restaurant. I ate the skinless option first, and as expected, it tasted like chicken.
I ate the legs with skin on, immediately after. Just as my local guide had insisted, it was the better option. With the skin, it was more flavourful, and unique, in that you could not mistake it for chicken.
In the future, if I see frog legs on the menu, I wonder if I can insist on keeping the skin on.
